Inspector observed food employees in the prep area not wearing proper hair restraints; food utensils and knives being stored in a sanitizing solution in between uses; cooled potatoes not being reheated to 165 degrees within two hours for hot holding and cooled red sauce only reheated to 120 degrees for hot holding and not 165 for 15 seconds as required (both heated during inspection); chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, not 50-100 ppm as required (corrected); food residue on manual can opener blade and gear; ceiling tiles above the pizza bakery area had water damage and a buildup of grease and chipping paint on suspended ceiling tile rails above the prep area in pizza room; and a buildup of grease droplets above cooking surface on fire suppression system and drip guard.

Inspector observed food employees in the kitchen area not wearing proper hair restraints; food ingredient storage containers in the kitchen area not labeled with the common name of the food; thermometers for ensuring proper temperatures of food were not available or readily accessible; no chemical sanitizer being used on equipment and utensils after washing and rinsing them (placed in the dishwasher for cleaning and sanitizing); and the drain line leaking below the two-compartment sink.
