For the past three years, Gage Cota has operated a late night hot dog cart by the railroad tracks in the Village of Fairport.
He’d open the cart, called The Barking Bun, at 9 p.m. every Friday and Saturday night ― in the heat, in the cold and in all kinds of weather conditions ― and serve burgers, hot dogs and sausages to the partiers in the now-thriving hot spot.
He’d stay open until his food sold out. One of its attractions was his homemade Boom Boom sauce, a creamy condiment that brings the sweet and the heat.
Cota grew up in Fairport, surrounded by cousins and cooking with family members. “I grew up jumping off bridges and all the local stuff,” he said.
Now he has come in from the cold, having set up his own sandwich shop in Fairport Convenient, a convenience store at 154 N. Main St.
On one side of the shop, to the right of the main entrance, The Barking Bun serves sandwiches made on hearty rolls that Cota purchases at Vinny’s Bakery & Deli in Fairport. The hot sandwiches are cooked on a panini press until crispy on the outside; options include NY-Philly cheesesteak, West Coast chicken cheesesteak, Buffalo chopped chicken and a pressed cheeseburger. The cheeseburger and the West Coast chicken cheesesteak both feature his Boom Boom sauce. Both cheesesteak sandwiches are generously ladled with a warm cheese sauce for a gooey mouthful.
Each day also brings a different cold sub. All of the hot and cold sandwiches cost $10 each, including chips; you may purchase beverages in the shop.
The sandwiches may be purchased made-to-order from 10 a.m. to 3 p.m. Monday through Friday. At other times, or if you’re in a hurry, you may purchase premade sandwiches from his cooler and hot display.
Cota plans to add picnic tables so that Fairport residents can gather to grab a sandwich, along with beverages and ice cream from the shop ― “turn it into a local staple,” he said.
He’s retired the late-night operation for now, but The Barking Bun Catering Co. cart is for hire for catering at private events.
